Raisins are ripe and dried grapes that are sold under different names in the marketplace, depending on the type of grape, the drying method and conditions and its authorized additives. According to the Iranian national standard, raisin varieties are divided into four groups: sunny, sharp, and grape. Sunflower raisins are the fruit of different types of seedless grapes that are dried by direct sunlight and turn brown. While grape raisins are amber to light brown. But for the production of sharp grapes, the permissible alkaline solutions are used, the final product being light yellow to brownish brown. Interestingly, there are two types of seeds and seeds in the market, so this classification is due to the type of grapes used to produce raisins. In addition to raisins, Currants also falls into the category of raisins made from red chamomile or royal black grapes. Among raisins, the two types of grape raisin and sharp raisin have good export and sales. These two types of raisins are similar in terms of the type of grape applied and the method of production, but the only difference is the sulfur smoke added to the raisin.
