Processing and conservation of grapes by suitable techniques has been a major activity by our Company since 40 years ago. Optimization of drying and pretreatment operations of this fruit have been extensively carried out. Since 80% of our products directly exporting to Europe so to comply the EU standards we use high-tech machines such as X-Ray, Laser sorter and latest detecting machine to remove all external material. However, in order to achieve the production of high-quality raisins and reach consumers’ acceptance, special attention and high-tech machines used for quality attributes in our company. Quality characteristics of grapes such as color, texture, vitamins, phytochemicals, aroma profile and microbial stability are of paramount importance since they could vary throughout the dehydration procedure and would directly determine quality perception and consumer choice
